TAPORI

PROJECTED OPENING: Late Fall 2024 600 H Street NE Industry Veterans Dante Datta and Chef Suresh Sundas will be opening their newest concept, Tapori, in DC’s H Street Corrdior this Fall. Tapori will celebrate Indian Street Food with the power to bridge communities through culinary prowess with regional dishes and cocktails from their native homeland. The restaurant is inspired by the street foods, taking inspiration from regions in India- the South: Kerala (coconut, spicy, seafood) Mughal-influenced Hydrabad, Center-west like Mumbai, and Eastern regions like Sundas' native Nepal(influenced by both India and China). Guests can get excited for dishes like innovative street food such as Pani Puri, Vada Pav and Dosas, as well as recipes inspired from Chef Suresh’s single mom where he grew up in the impoverished rural village of the Pathari village of the Morang district in Nepal. Cocktails include an “Indianish” take on the classic Pornstar Martini, and ingredients that include indigenous spices and fruits like chaat masala, jackfruit puree, kashmiri chili and hibiscus. Photo by Calvin Kim

2322 Silver Arrow Way, Herndon, VA Chef Peter Chang has opened his 12th location of his Peter Chang restaurant in Herndon’s Arrowbrook Shopping Center. The restaurant features a tapas-style menu, highlighting smaller, shareable plates—a departure from traditional banquet-style dining. The menu features signature dishes alongside newer fare such as Steamed BBQ Pork Bao, Taiwanese Popcorn Chicken, and Wanzhou Broiled Branzino, plus vegan dishes like Scallion Pancakes, Spicy Dry Fried Eggplant, Vegan Spicy Dan Dan Noodle, and more. A full-service bar will serve a list of baijiu cocktails. The High Holidays - Are They Late Or On Time

The High Holidays: They’re either early or late, and this year Rosh Hashanah seems late and Yom Kippur is even later! This Jewish holiday never arrives exactly when it’s supposed to. However!  Rosh Hashanah does begins at sundown on the evening of Wednesday, October 2. It is time to ring in the Jewish New Year with the blowing of the shofar, swirling slices of apples into honey, and then throwing our sins (via pieces of bread) into a body of water. Industry Night: September 4th 2024

So today I am back with the Peter Chang family at their latest restaurant in the DC Area - NiHao Arlington, at the new Amazon headquarters at National Landing in Arlington, VA. The vibe is very hip and summery, with an airy street-facing bar and lots of delicious small plates. Lydia Chang designed the gorgeous space and I cannot wait to catch up with her. ALSO on this show is good friend and recent James Beard & RAMMY award winner Masako Morishita — so excited to have two boss babes with in with me today.I met Masako before she was ever in a restaurant kitchen. I remember where I met her! We were at the opening of Officina and your boyfriend at the time (now husband) introduced us. You were making something — dumplings doing pop ups? Anyway a year or so later you joined me on F&TB — you were executing at Brent Kroll’s Maxwell. And now you winning all sorts of well-deserved accolades while behind the stove at Perry's. How did you go from being the captain of the Commanders cheerleading squad to the 2024 James Beard Foundation’s Emerging Chef and the 2024 RAMMY’s Rising Culinary Star of the Year.At the end of today’s show, Lydia and Masako agreed to a short panel discussion on the trials and tribulations of being immigrant Asian women in the hospitality industry.
